Ingredients
3 ripe bananas
3/4 cup cottage cheese
2 large eggs
1/2 cup brown sugar or maple syrup
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
Optional: 1/2 cup chopped walnuts or chocolate chips
Instructions
1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan.
2. In a large bowl, mash the bananas. Add cottage cheese, eggs, and sweetener. Stir until well combined.
3. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
4. Add the dry ingredients to the wet ingredients. Gently fold until just combined. Do not overmix.

5. Pour the batter into the loaf pan. Smooth the top and bake for 50–55 minutes.
6. Check with a toothpick; it should come out with a few moist crumbs. Let cool 10 minutes in the pan, then transfer to a wire rack.

Notes
Store wrapped at room temperature for 2 days or refrigerate for up to 5 days.
Slices can be frozen individually for up to 2 months and reheated in a toaster or microwave.
