Ingredients
1 ¾ cups all-purpose flour

2 tsp baking powder
½ tsp salt
1 ¾ cups oat milk (unsweetened)
2 large eggs
¼ cup avocado or canola oil
1 tsp vanilla extract
Instructions
1. Preheat your waffle iron and lightly grease it with oil.
2. In a large bowl, mix flour, sugar, baking powder, and salt.
3. In another bowl, whisk oat milk, eggs, oil, and vanilla together.
4. Pour the wet mixture into the dry and stir until just combined.
5. Let the batter rest for 5 minutes.
6. Spoon batter into the waffle iron and cook until golden brown.
7. Repeat with remaining batter.
8. Serve warm with desired toppings.
Notes
Use coconut oil for a hint of sweetness.
For egg-free waffles, substitute flax eggs.
Freeze extra waffles and reheat in a toaster for busy mornings.
