- 1 cup full-fat mascarpone cheese
- ½ cup pure pistachio paste or cream
- 4 large egg yolks
- ½ cup granulated sugar
- ¾ cup heavy cream
- 2 cups espresso or strong coffee (cooled)
- 24 ladyfingers (Savoiardi)
- ¼ cup crushed pistachios (for garnish)
- Unsweetened cocoa powder (optional, for garnish)
Instructions
- Whisk the egg yolks with sugar in a heatproof bowl until pale and thick. Place over simmering water and whisk for 8–10 minutes until custard-like. Let cool.
- Fold in mascarpone cheese and pistachio paste until fully combined.
- Whip heavy cream to soft peaks and gently fold into the pistachio mascarpone mixture.
- Quickly dip ladyfingers into espresso for 1–2 seconds. Don’t oversoak.
- Layer half of the soaked ladyfingers in a dish. Spread half of the pistachio mascarpone cream on top.

Assembling the layers of pistachio tiramisu - Repeat with another layer of soaked ladyfingers and remaining cream. Smooth the surface.
- Cover and chill in the refrigerator for at least 6 hours, preferably overnight.
- Before serving, sprinkle with crushed pistachios and cocoa powder if desired.
