A soft, high-protein donut recipe using simple pantry ingredients like oat flour, Greek yogurt, and protein powder.

Ingredients

1 cup oat flour

½ cup almond flour

½ cup vanilla protein powder

½ tsp baking powder

¼ tsp cinnamon

2 eggs

½ cup Greek yogurt

3 tbsp maple syrup

2 tbsp melted coconut oil

1 tsp vanilla extract

Pinch of salt

Instructions

1. Preheat oven to 350°F and grease a donut pan.

2. In a large bowl, whisk oat flour, almond flour, protein powder, baking powder, cinnamon, and salt.

3. In another bowl, whisk eggs, yogurt, syrup, oil, and vanilla.

4. Mix wet into dry until smooth.

5. Spoon batter into pan and bake 13–15 minutes.

6. Cool 5 minutes in pan, then transfer to a wire rack.

Notes

Store in airtight container up to 2 days at room temp or 5 days in fridge. Freeze up to 2 months. Add yogurt glaze or nut butter drizzle if desired.
