Ingredients
1 cup purple sweet potato peels
1/2 cup red cabbage peels
1 lemon, sliced
1-inch piece fresh ginger
2 cups water
Instructions
1. Rinse and clean the vegetable peels well.
2. Add all ingredients to a small saucepan.
3. Bring to a boil, then reduce heat and simmer for 10–15 minutes.
4. Strain into a mug and serve warm or chilled.
5. Drink once daily for best results.
Notes
You can add a dash of cinnamon or a spoon of apple cider vinegar for added benefit. Make sure to use organic produce if possible since you’re using the skins.
